I've always been an advocate for clean eating and nourishing your body to simply feel better and more energized, health issues or not. After researching (and testing) multiple diets for a healthy lifestyle, I discovered the Candida Diet which seemed to be an interesting relief to some symptoms I'd been experiencing like itchy skin that keeps you up at night, fatigue, anxiety and so on. But more on that in a later post.

I took one look at the restrictions on this diet and thought UGH. All the breakfast recipes seemed so bland and restrictive. No pancakes, no baked goods, no fruit. With all the rules, I seemed to be left with plain grains and eggs. No one wants to start their day with plain quinoa with egg whites. BORING.

I don't know about you, but I was not about to let my favorite meal of the day go down like that. So stumbling upon Julian Bakery's Paleo Thin bread at Whole Foods changed the anti-inflammatory rulebook completely. This is not an ad, I just really love this bread. It's clean, it's made with simple ingredients like almond flour, egg whites, fiber, coconut flour and sweet potato. Most importantly, you can pronounce all the ingredients and it is free of sugar, refined flour and yeast (again, more on why that's a good thing in later posts).

And once you have the foundation, the topping possibilities are really endless. Avocado, salmon, eggs, your creativity can run wild with toast. This one is topped with fresh naturally low in sugar organic berries, sunflower butter (free of inflammatory mold found in some nuts like peanuts), local Florida honey and fresh herbs from our garden. It's quick to make, it's hearty and makes for a colorful start to the morning.

Berry Sunflower Toast


  • 1 slice of bread of choice - I use Julian Bakery's Paleo Thin for a keto, sugar-free, gluten-free and yeast-free option.

  • Handful of berries - Sliced strawberries, blueberries, blackberries and raspberries — go crazy!

  • 1 tbs of Sunbutter or nut butter of choice.

  • 1 pinch of mint

  • 1 pinch of chopped basil

  • 1 tsp of local honey

  • 1 tsp toasted coconut (optional)


Toast your slices of bread. Spread Sunbutter on toast, top with berries and herbs. Drizzle honey and sprinkle with toasted coconut. Enjoy!
